Corvinone is a really generous vine which gets a vegetative balance only in particular conditions. That's why we thin out the clusters during the year, so only a 20% reaches the perfect maturation designed for producing Amarone. The drying is slow and takes place at a low temperature. This wine is fresh, elegant but also round and persistent.
